I have a pretty basic question, like it's 1999 :|

I've been wondering this for years. Either I'm being thick and have missed the most basic feature of all, or else Google has failed to provide the most basic feature of all.

There's no way to sort a Gmail inbox by Subject, Date, etc... is there? Is there any LAB that I could turn on somewhere buried in the settings that I don't know about?

And if not, why in the world don't they introduce this most incredibly basic thing? Sometimes I want to gather up all emails with a certain subject and move them but alas...

Well you can certainly find emails with a particular subject or content just by entering it in the search box at the top?

You make a good point, at least the search feature is extremely robust

On-line GMail never was aimed to be a full client.
For more productivity on GMail, Google suggests two methods:
1- Use a Mail client app (Outlook, Mailbird, Thunderbird, ...) instead of the web base viewer offered by Google.
2- Use browser extensions ( Gmelius, Sorted For Gmail, ....)

Extensions mostly are not free and they access to your mail contents. Though they don't have access to your account, but have access to your mail contents.

It just seems like such a basic thing that they could add easily, or maybe not (?)

I agree. In the Gmail app on Android you cannot even mark all the message read. :(
To make all mails read on your android :
  1. Tap and hold any mail. A tick mark will be set on that mail.
  2. Tick "Select All" check box on the top left of screen.
  3. Fine tune your selection if needed (tap to exclude some of them if you don't want them all)
  4. When you're OK with your selected (ticked) mails, tap the envelop on the top right (at the left of three dots)
  5. All mail are set to read.
Repeat step 1, 2,3 again, and tap the Closed Envelop to make them all unread.
