Is there an app where I can speak into my android and my wife (in Nursing Home) will receive it in text. I have been googling voice to text and there is a mess of them, but it doesn’t tell me how they work. I am looking for something that she doesn’t have to open something special on here phone, just answer. Is there such an animal out there?

If you install gBoard (Google Keyboard) it has a Talk-to-write feature.
you can open a memo, note, or whatever, talk and it write it down for you.

I'm thinking you need something like a pager to cover your first requirement:-

What about plain old SMS text messaging? She'd get a notification (I think) I'm not 100% sure if that'll be good enough, as I turned off all notifications along time ago.

the spoken message is also part of my texting app on samsung.
Press and hold the squiggly thing while recording.

I don't need to see a text of what I just said. I need my wife to see the text on her phone

If you have a TV or monitor or laptop or ipad, you can cast your mobile screen to it. Casting screen comes with android.
If you have iPhone it comes with AirPlay with the exact same ability.

Every new TV is equipped with both.

You can share use GBoard and start talking will it write it down for you and cast or share your screen with your wife's.

No, as far as I know, it doesn't ring. But will appear on her screen
Here's how you do it.
There are also loads of youtube videos.
If you use iphone, search for AirPlay.

Thanks, looks like that will work for her. She is 82 and even with a hearing aid she can't hear well.

I have an app on my phone called tasker.
It allows you to do so much more with your phone.
I have a task where if I get a text it raises the volume, says 'Incoming text', then puts the volume back to where it was previously.
